Tasty Tasty Tasty: Turkey Sausage Rolls

If you follow me on Instagram, you would have seen back in January I attended the Kids Business Bloggers BBQ. While I was there I was lucky enough to indulge in one of the tastiest buffet lunches I've ever been faced with. Filled with delicious turkey dishes, it was sponsored by the lovely people at Steggles and their Turkey Shortcuts range.

My sister and I went back for plate after plate of food, and attempted to disguise our piggish ways by timing our trips to the buffet when people weren't watching! Even Punky got in on the action, devouring 4 Turkey and Ricotta sausage rolls.
So when I was asked after the BBQ if I'd like to get some Turkey Shortcuts and try my hand at cooking, I jumped at the chance for two reasons. One, that turkey was gooood. And two, I knew I wouldn't actually have to do the cooking, Dave would! He's a good wife.
So last week, what seemed like a truckload of turkey turned up on my doorstep. After a brief panic attack about where the hell I was going to put all this turkey, I turned my attention to critiquing each of the Steggles turkey recipes on their websites, as well as going through Pinterest for a little more Turkey inspiration.

Finally I decided that my mission for Dave would be to cook me a variation on some Turkey & Cranberry Sausage Rolls. We could have gone with the Turkey & Ricotta ones, because they were tasty, and a proven winner with Punky, but I just can't go past this good old Turkey & Cranberry combo from My Lovely Little Lunchbox.
We changed a couple of things slightly, and if we were to make them again we would double the quantity of cranberry sauce as it just didn't shine as much as I'd been hoping for. I really wanted to get a bit of a cranberry hit in each bite.
Turkey Sausage Rolls
Ingredients (Makes 32 rolls):
(these measurements are highly precise folks. Not!)
1kg Steggles Turkey Shortcuts Mince
4 spring onions, chopped
2 big teaspoons of grated fresh garlic
4 big teaspoons of dijon mustard
A teaspoon and a bit of ground sage (you can use fresh if you like, about 4 tablespoons chopped)
1/2 cup of cranberry sauce
2 eggs lightly beaten
4 sheets of thawed puff pastry (ain't nobody got time to make their own!)
Some extra lightly beaten egg for sealing and washing and sesame seeds for sprinkling
Method:
1. Combine mince, spring onions, garlic, mustard, sage, cranberry sauce and the 2 eggs in a big-ass bowl. Mix it up well, don't be afraid to get in there with your hands.
2. Lay out your 4 puff pastry sheets and cut each one in half.
3. Roughly measure out the same quantity of mince mixture down the middle of each half of puff pastry. (Dave was all scientific with his scale and measurements all written down, but if it had been me I would have just whacked it on each one and moved a little bit here and there until they all looked mostly the same!)
4. Once you've measured out your mixture and made a nice little line of it down the middle of the pastry, roll the pastry around the mixture and use the other lightly beaten egg to seal the pastry together.
5. Brush each roll with some more lightly beaten egg, sprinkle on as many or as little sesame seeds as you like, and then cut each roll into 4 smaller rolls.
6. Whack in an oven pre-heated to between 200 to 220 degrees celcius (use the knowledge of your oven to figure out what would work best for you) and bake for between 20 to 30 minutes. Again, you know how your oven works best, so adjust time accordingly but don't bake for less than 20 minutes.
7. Pull those tasty suckers out and chow on down!
We made these babies on Wednesday night when we had family night here, so that we could use them as guinea pigs. Thankfully, instead of poisoning them, we delighted them! Everyone enjoyed the sausage rolls and are definitely keen to try them again, just with a bit of extra cranberry next time.
Dave and I are now working our way through the rest of the truckload of turkey and can I just say, if you see the turkey burgers at your local supermarket you NEED to buy them. They are soooooo good! Dave cooked up some of the shanks in the slow cooker last night and reported that they were also good (I wouldn't know, I went out to dinner with my girlfriends *she says smugly*). Tonight we are taking the thigh roasts up to Dave's parents place to experiment on them, Here's hoping they are delighted as well!

I agree with you about the rissoles, we tried them last night and they were very tasty, I personally can't wait to try out the roast and enjoy slow cooked shanks as well. Glad I was not the only one finding interesting places to store all that turkey!!!!
Night training will be interesting when the time comes though as she likes to take her water bottle to bed with her, it's become a bit of a security item I think, because she takes it to pre-school with her. I'm slowly starting to convince her to go to bed without it though so hopefully when the time comes to night train she will be out of that habit!
It's the little things with me. Lately I've been unable to pronounce words properly and they get all muddled up. When we were at the markets on Friday night the lady asked me if I wanted chicken or pork and I said "chalk". :-/ I think I went bright red.
I was actually pretty nervous after that, because we don't eat pork, and I really hopped she understood I wanted chicken!!! (and definitely not chalk!)
